  • 120 g digestive biscuits (or graham crackers)
  • 60 g melted butter

  • 300 g cream cheese (room temperature)
  • 200 ml heavy cream
  • 100 g sugar
  • 2 large eggs
  • 2 tbsp Osaka Matcha ceremonial grade powder
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

  • A light dusting of matcha powder
  • Fresh berries or white chocolate flakes






Step-by-Step Instructions




Step 1 — Prepare the crust



  1. Crush the biscuits into fine crumbs.
  2. Mix with melted butter until evenly coated.
  3. Press the mixture into the bottom of a 20 cm (8-inch) baking pan.
  4. Chill in the fridge for at least 15 minutes while preparing the filling.




Step 2 — Make the matcha filling



  1. In a large bowl, beat the cream cheese until smooth.
  2. Add sugar, vanilla, and eggs one at a time, mixing well.
  3. Sift Osaka Matcha powder together with cornstarch, then add it into the mixture.
  4. Pour in the heavy cream and mix until the texture is silky and uniform.

Step 3 — Bake



  1. Pour the filling over the chilled crust.
  2. Bake at 160 °C (320 °F) for about 45–50 minutes, until the center is just set.
  3. Let cool at room temperature, then refrigerate for at least 4 hours (ideally overnight).




Step 4 — Serve



Before serving, dust the top lightly with matcha powder and decorate with berries or white chocolate curls.
